Challenge 14: Refreshing and Delicious

Hey Chase,

I hope your first week back went well! Did you do anything fun this past week? My week went pretty well. I had a snow day on Tuesday!!!!, which was a nice surprise. Dad also helped me do my taxes on my day off. It is nice to have them done and not have to worry about doing them anymore. I am hoping to use the money I get back to buy a new computer.  My current commuter has pretty much reached the end of its life. Even more than before. The power plug does not work very well anymore so I am having trouble keeping the laptop on.

One thing I have been working on lately is trying to eat more balanced meals. I am convinced that my lack of energy and headaches are due to a mixture of what I am eating and what I am not eating. I need to eat larger and more regular meals. I went to a community ed class two Mondays ago on Eating Balanced Meals for Balanced Moods. It was really interesting. It emphasized the connection between our digestive system and our brains. Did you know that our brain tissue turns over every 5 months? I didn’t. But that is why it is important to eat enough protein. Protein has amino acids which are needed to build neurotransmitters. It is all very fascinating to me. We also talked a lot about blood sugar levels and the extreme fluctuation throughout the day due to our poor sugar habits. One snack the woman suggested was berries (I bought frozen) with a bit of heavy whipping cream poured over them. I tried them this week and I love it! It is my new favorite snack. It has the healthy whole food of fruit with a bit of sugar and the cream is fat that helps control the sugar level. She also suggested apples and peanut butter. I have been adding this to my lunch.    IMG_0992

For my superfood several weeks ago I ate a bunch of grapefruit. I love grapefruit season! Most of the time I simply cut the grapefruit in half and eat it plain right out of the peal. However, sometimes I would put some cinnamon sugar on top of each half and broil it in the oven for about 10 minutes. I liked this as well.
